We recommend consuming the entire eggplants including its peel when it’s cooked because the purple skin of eggplants is rich insufficient nutrients such as nasunin and polyphenol. Scoring its skin with a knife along with 5mm deep cuts will help the flesh of eggplants cook evenly and absorb seasonings well. It should be refrigerated when you do not intend to consume eggplants within two days. To refrigerate, it should be wrapped in a paper towel or newspaper and placed in plastic bags, otherwise, refrigeration will accelerate the degradation of its freshness.
